Today May and I went to see Doi Chiang, wow what a place what views what a hidden gem, Shangri la. if there is one place to visit before you die this has to be on the list. Mountains, rivers valleys pine forests, WOW simply stunning just 20 kl south of Chiang Rai on the rd to Chiang Mai this piece of heaven nestles snugly hidden in the mountains.

It was a perfect start to the day with the sunrise captured on Time lapse photography, we ventured up the Temple hill just outside our Thai Village to capture the setting sun along the valley and over the mountains. Suitably refreshed with lashing of Leo beer we crept off to bed to sleep, them came the Thunder lightning and fierce winds. It was a bright sunny morning in Chiang Rai and everything looked fresh for the rain and then we walked into the garden for the evidence of natures work over night!

Today we make Mango Chutney so easy a child could do it.
6 mango's 3 apples, 1 Onion, 1 cup sugar, 3/4 cup vinegar, 1/2 tsp salt, 1/2 tsp nutmeg, 2 tsp curry powder, 1 lemon, and a tiny pinch of clove powder.
